Peanut Butter Brownies

I had such an urge to bake something today – that’s what you get when you’re stuck at home and have a tendency to watch a lot of baking shows – but I realized I only had a limited amount of ingredients in my pantry. I saw a box of brownie mix hiding in the back next to a small jar of peanut butter and couldn’t resist putting the two together. So, I went to my favorite go-to recipe finder. Pinterest is really great when you’re in a pinch. I picked this recipe almost immediately, even though I didn’t have the specific set of ingredients needed for the frosting. I decided to make my own and it came out pretty good, I have to say. These peanut butter brownies are super easy and quick to make. They’re wonderfully gooey and delicious, with the perfect amount of peanut butter flavor. I used Ghiradelli Double Chocolate mix, but you can use whatever you like. Pick your favorite. I think you’ll love these brownies either way. Stay safe, stay home, and have fun!

Peanut Butter Brownies

INGREDIENTS

The Brownie


  • 1 box (18oz) Brownie Mix (prepared)
  • 1/4 cup brown sugar (packed)
  • 1/2 cup peanut butter
  • 1 egg

The Frosting


  • 1 cup powdered sugar
  • 1/2 cup peanut butter
  • 1/2 stick unsalted butter (melted)
  • 2-3 tbsp milk

INSTRUCTIONS

Brownie:

  • Preheat the oven to 325F. Line a 9×9 square pan with parchment paper.
  • Make brownie batter as directed on the box. Reserve a 1/2 cup of the brownie batter and set aside. Spread remaining batter in the pan.
  • In a small bowl, mix together brown sugar, peanut butter, and egg.
  • Using a cookie scoop, evenly drop the peanut butter mixture onto the brownie batter. Top with the reserved brownie batter.
  • Using a toothpick or knife, swirl the two mixtures together to create a marbled design.
  • Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
  • Cool completely.

Peanut Butter Frosting:

  • Using a hand mixer and whisk attachment, mix peanut butter and melted butter on medium speed.
  • Reduce speed to low and add the powdered sugar.
  • Add the milk.
  • Beat on high until frosting is smooth and spreadable.

Assembly:

  • Spread the frosting over the brownies.
  • Cut pieces to desired size and enjoy!
